Garlic Shrimp Noodles

🍴Ingredients
300 g shrimp
2 green onions
10 garlic cloves
1/2 tsp grated ginger
300 g noodles
1 tsp neutral-tasting oil (or toasted sesame oil), to coat (optional)
3 tbsp neutral-tasting oil
1 tbsp toasted sesame oil
Sesame seeds, to garnish (optional)
Soft-Boiled Eggs (optional)
Sauce:
1 tbsp Korean chili pepper flakes (gochugaru)
1 tbsp sugar
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp mirin
1 tsp Korean chili paste (gochujang)
Black pepper
Small pinch of MSG (optional)
🍴How to
1. Peel and devein the shrimp (Or defrost depending on what shrimp you're using, maybe even kill it? 🥴). Throughly pat dry with paper towels. If you don't, the sauce will be "wet".
2. Thinly slice the green onions, separating the whites and greens. Finely chop the garlic. Grate a small knob of ginger (1/2 tsp). Cut the bok choy in half lengthwise.
3. In a bowl, mix together Korean chili pepper flakes, sugar, soy sauce, oyster sauce, mirin, Korean chili paste, black pepper to taste, and MSG.
4. Bring a pot of water to a boil. Cook the noodles according to the package instructions. Give them a quick rinse under cold water. Transfer the noodles to a bowl. Give them a good mix with 1 teaspoon of cooking oil (or sesame oil).
5. In a wok (or pan), heat the oil (3 tbsp) over medium-high heat. Once it gets hot, add the white parts of green onions, garlic, and ginger. Saute for 1 minute or until fragrant.
6. Add the shrimp. Don't cook the shrimp for too long, they will get dry and shrink... Reduce the heat to medium. Add the sauce and keep moving around for 1 to 2 minutes!
7. Increase the heat to high. Add the noodles. Toss together for 1 to 2 minutes. Turn the heat off.
6. Time to plate! Top with green onions, sesame seeds, and soft-boiled eggs.
