White Chocolate Mousse With Lime-Marinated Strawberries

🍴Ingredients

Mousse

1 1/4 cups heavy cream (3 dl)

3.5 oz white chocolate (100 g)

1 egg

Lime Marinade:

1 lime

2 tablespoons liquid honey

3-4 cups strawberries (fresh or frozen), equivalent to 0.75-1 liter

🍴How to

  1. Melt the chocolate in a water bath or in a saucepan on low heat, just enough so that the chocolate melts. When it starts to soften, stir with a fork so you can tell when it no longer needs to be heated.

  2. Measure the egg into one bowl and the whipping cream into another bowl.

    Whisk the egg with an electric mixer or a regular whisk. Then whip the cream fairly loosely with an electric mixer

  3. Add the melted chocolate (which should be lukewarm, not hot) to the whisked egg while stirring vigorously or use an electric mixer at low speed.

    Gradually fold in the whipped cream, stirring until you have a smooth and fine mousse

  4. Pour the mousse into serving glasses. Let it chill in the refrigerator for at least one hour.

  5. Wash the lime and dry it.

    Grate the peel of the lime. Squeeze out the juice. Put the grated peel and the juice in a bowl (which will also hold the strawberries later).

    (If desired, you can save some of the grated lime zest for garnish.)

  6. Mix lime juice and lime zest with honey.

  7. Slice the strawberries and place them in the marinade. They can stay there for a few hours if desired, but at least about 15 minutes

  8. Add the marinated strawberries over the chocolate mousse. Garnish with lime zest and/or white chocolate.
